Mexican Taco Recipes for Cinco De Mayo

Beef, Cheese or Chicken Taco Fillings Made Easy

Although the word Taco means a snack, the Tacos are enjoyed for meals as well. Here are three recipes for making the filling for the Mexican favorite.

These can go into any type of taco shells you desire.

Cheese Filling

7 chilies, peeled

1 lbs cheddar cheese or Mexican mixed cheese

1 lbs Monterey Jack cheese

First, remove seeds from chiles. Cut cheese into slices or if shredded pout into taco shells. Put chili in the middle and then more cheese. Bake at 300 degrees Fahrenheit for about 15 minutes. Check to see when cheeses look melted. Remove and serve with salsa. Very easy to make.

Chicken Filling

1 onion, diced

1 teaspoon garlic

6 tablespoons vegetable oil

4 oz can chopped green chilies, drained

Salt to taste

14 ½ oz can of whole tomatoes, drained

2 cups cooked chicken in about 1" cubes

½ pint of sour cream

1 cup guacamole

1 ½ cups shredded Monterey Jack or Mexican mix cheese

1/3 head shredded lettuce

Cook onion and garlic in oil until soft. Add chilies, salt and tomatoes. Cook and stir for about 10 minutes breaking tomatoes into smaller pieces. Add chicken and cook thoroughly. Drain mixture. Place about 2 teaspoons of mixture in taco, followed by 2 teaspoons of sour cream and 2 teaspoons of guacamole. Top with cheese and lettuce and serve. These are my favorite.

Beef Filling

2 lbs ground beef

1 onion, diced

1 teaspoon salt

10 oz can of tomatoes and green chilies

1/3 head lettuce

3 chopped tomatoes

2 cups Shredded Mexican or Monterey Jack cheese

Jar of your favorite salsa

Brown meat and onion. Drain. Add salt, tomatoes and green chilies. Cook about 15 minutes on low. Fill each taco with meat mixture and cook in oven at about 250 degrees Fahrenheit until warm. Add lettuce, tomatoes and cheese and serve. Have salsa on the side.

If you are feeling very adventurous, you can also use beef brisket instead of ground beef or cabbage instead of lettuce. Tacos are good with just about any meat you love. Don't be afraid to try something new. These are just samples of the typical Mexican tacos.
