Ingredients:
1 Lb of chicken breast (dark meat is fine if you prefer it)
16oz jar of Salsa w/ black beans and corn
8 soft flour burrito sized tortillas
8oz's shredded cheese
1 med-small sized onion diced
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
2 tsp chili powder
1 tbsp olive oil
1 tbsp brown sugar
½ tsp cinnamon
Small container of sour cream for dipping
Salt and pepper to taste
Hot Sauce (optional)
Chives (optional garnish)
Step 1: Heat the Meat!
If you have left over baked, grilled or fried chicken you can skip this step. Otherwise put your chicken in a medium sized sauce pan. Cover the chicken with water, and place on high heat. Add a dash of salt, pepper, and garlic powder. Boil until it is done, slightly under, is better than slightly over done.
Step 2: Shred it!
Using two forks shred your chicken. Then set it aside.
Step 3: Onions, and try not to cry!
Using another medium sauce pan, or the same one just make sure there is no water left from the chicken, combine the olive oil, onions, cumin, garlic powder, onion powder, garlic powder, cinnamon, and if you like it hot, your hot sauce to taste. Cook the onions on high heat until they are coated in the seasonings and partially cooked.
Step 4: Now throw in the rest!
Next, add in your shredded chicken and stir until it is fully coated, then add the jar of salsa. Refill your salsa jar with 8oz's of water, put the lid back on, give it a shake and then add the liquid to your pot.
Step 5: Simmer down now!
Let this party simmer on med-low for about an hour. Stirring occasionally so nothing sticks to the pot, after around an hour almost all of the liquid will be gone. Let this sit until you feel you can handle it safely.
Step 6: Let's roll!
Cut the tortillas once down the middle then divide the halves into thirds. So you will get 6 pieces per tortilla. Now place a spoonful of your chicken mixture on a piece of tortilla, add a sprinkle of cheese and then roll it up.
Place these guys seam side down, so they don't unroll, on a baking sheet sprayed with non -stick spray.
Step 7: Bake and serve!
Bake these mini's in your oven on 375 for 10-15 minutes until the shells are crispy. They are done! Serve them along side sour cream garnished with some chives.
There you have it, Mini Baked Taquitos!
