2 cups Chocolate Chip Cookies
1/3 cup Granulated Sugar
1/4 cup Powdered Cocoa
2 cups Miniature Chocolate Chips
3-8 ounce packages Cream Cheese
14-ounce can Sweetened Condensed Milk
3 Eggs
3 teaspoons Vanilla

Directions for Miniature Chocolate Chip Cheesecake Recipe

Preheat the oven to 300 degrees. Insert cupcake liners into a muffin tin and set to one side.

Break the chocolate chip cookies into smaller pieces, approximately the size of crumbs. Mix 1 1/2 cups of the cookie crumbs with the sugar, butter, and powdered cocoa. Sprinkle the mixture over the bottom of the cupcake liners and press down firmly.

Melt the chocolate chips in a double boiler over low heat, or in your microwave. Mix the cream cheese and sweetened condensed milk together until you work out any lumps in the cream cheese.

Add the other ingredients to the cream cheese mixture, including the melted chocolate. Stir until the ingredients are well combined.

Pour the mixture into the cupcake liners and bake for 20 minutes. Shake the pan slightly and when the top appears firm, the cupcakes are done.
Tip
For an extra taste of chocolate, sprinkle more chocolate chips across the top of each cheesecake. If you want to skip the chocolate completely and make regular cheesecakes, omit the melted chocolate from the recipe. Use any type of cookie you like as the base or crust for the cheesecakes.
