Mister Jim's Favorite Smoke Grilled Lemon Chicken Recipe

My brother is a master at the smolin' grill. Filling the fire-box with home-grown hickory wood, Jim explains how you gotta create an atmosphere of convection within the smoker; opening the topmost flap to allow an escape route for the smoky air, "But not too much", he admonishes, "gotta keep the smoky-air moving across the bird at the ideal flow-rate, enveloping and infusing the flavor deep into the tender muscle tissue". Prepare to have your taste buds rudely-awaken in a lemon and spice explosion! Personally, I have never tasted anything quite like it. The individual flavors mingle and coalesce with the moist chicken into a brilliant concoction so succulent that it would make an alchemist cry with tears of joy-turning bland chicken into edible gold!

Ingredient list:

1" to 1 1/2" thick skinless, boneless chicken breast

3 cups white vinegar

1 cup lemon juice

Lemon pepper

Lowery's seasoning salt

Marinate the breast in the lemon/vinegar/spice mixture, up to 3/4" of the meat, overnight (or at least for 3-4 hours), in an oven-safe cooking dish. Note: if marinating overnight, keep the level up to 3/4" by adding marinade every couple hours, as needed. Load your smoker with hickory chips, or if using a charcoal grill, pile the coals and wood-chip-pot on one half of the grill-the same side as the flame, and light. A gas grill will need to be configured with one half side burner on and the other half where the meat goes kept off. Allow grill/smoker to heat up to 275 degrees. Place the pan with chicken and marinade on the non-flame side of the smoker or grill and leave for 1 hour. Remove the chicken from the pan, sprinkle the meat with Lowery's and Lemon Pepper--creating a delectable crust, front and back, then place it directly on the grill and smoke for another half-hour. Add wood as needed to maintain 275 degrees.

That's it! You'll want to invite your favorite friends over for this better-than-gourmet feast, or throw a block party! Delicious if eaten with mouth watering cloverleaf yeast rolls and Jell-O cake for dessert . Time to chow down!!
