2 cups of minute rice
2 cups of water
1 quart tomato juice
Fry hamburger with slat and pepper and a little onion. Boil the water and add the minute rice, let boil a couple minutes then shut off and cover. Let sit a good 5 minutes. Add the rice and tomato juice to the hamburger. Mix thoroughly.
My Mom cooks hers in the oven for about 30 minutes at 350 degrees.
I like to mix mine altogether and cook it on top of the stove until it starts to thicken up alittle. When it is sitting while you are eating the rice will absorb the tomato juice.
You can add 1 tsp. of sugar to cut the acidity of the tomato juice.
Also you can take green peppers and cut the tops off and clean them out and stuff them with the spanish rice. Set the stuffed green peppers in a baking dish, and spoon and left over spanish rice around the peppers. The peppers give it a nice flavor for a change of pace.
You can serve with baked or mashed potatoes, green beans. And bread and butter, or dinner rolls.
