Montana Potato Salad

Potato Salad Made with Local Ingredients

MH Bonham
3 lbs of purple, red and Yukon gold new potatoes
4 hard boiled eggs, peeled
1/4 lb slab bacon
1 cup canola mayonnaise
1 Tbsp apple cider vinegar
1 Tbsp chopped parsley
1 tsp chopped chives
4 clove garlic, minced
1 tsp honey mustard
1 Tbsp chopped marjoram
1 Tbsp chopped oregano
salt and pepper to taste

Boil potatoes in hot water, drain and lightly mash them with the hard boiled eggs. Cut slab bacon into bite-size pieces and fry in a pan until cooked. Reserve bacon and 1 Tbsp drippings and add to potatoes.

Add all other ingredients and mix well. Chill and serve.
