HONEYED CHERRY MUFFINS
1 recipe Rich 'n' Sweet Muffins
¾ cup dark sweet pitted cherries, drained, coarsely chopped, and patted dry
¼ cup honey
Prepare muffin recipe as directed except reserve 2 tablespoons flour to toss with cherries. Decrease sugar to ¼ cup. Blend honey into butter and sugar mixture. Fold cherries into finished batter. Makes 1 dozen, about 220 calories each.
Overmixing can cause muffins to turn out tough, so mix only until well blended.
