Ease the Super Bowl Flu with Baked Pears and Apple Pancakes

It is Monday morning. Your Super Bowl party is merely a memory. Your overnight guests are up, but tired from the long night. They probably have the Super Bowl flu. Lure them back to life with some lively conversation, eye opening flavored coffee, and a scrumptious breakfast. You can fry eggs or make omelets, but that is ho hum. Instead, serve apple pancakes and baked pears drizzled with real cream. These recipes are uncomplicated, but still impressive.

Flavored Coffee and Flavor Drops

Get you and your guests moving with the spirit-soothing aroma of fresh-brewed coffee. Nothing beats the wonderful smell of early morning coffee wafting through the house -- especially after a long night. There are loads of flavored coffee (ground or whole bean) you can purchase in your local grocery store.

If you want to step it up, check out Capella Coffee Company online. They offer an amazing variety of flavored coffee. Try chocolate coconut, cinnamon raspberry or orange cream. If you'd rather, purchase some of their flavor drops. Simply brew the coffee and let your guests indulge in the flavor of their choice. Who could resist New York cheesecake or vanilla custard flavoring? The yummiest!

Fresh Apple Pancakes

What You Will Need - Makes 8-10

1 cup sifted flour
1 teaspoon baking powder
Pinch of salt
1 egg
3/4 cup milk
1 tablespoon melted butter
1/2 cup finely chopped apple

Cooking Directions

Sift dry ingredients together. In a mixing bowl, stir milk and egg. Add to the flour mixture and beat until smooth. Add the butter and apple. Stir until blended. Lightly grease a griddle or frying pan. Cook pancakes on medium-high heat turning once in the process. Serve the pancakes with warm maple syrup. Heat the syrup in a pan on low heat. Try drizzling honey on your pancakes for a nice change.

Oven-Baked Pears and Cream

What You Will Need - Serves 4-6

6 ripe (firm) pears
1/4 cup sugar (can use substitute)
3 teaspoons cinnamon
3 tablespoons melted butter
1 cup whipping cream

Cooking Directions

Preheat oven to 350 degrees. Peel, core, and slice the pears. Grease an 8-inch baking dish. Place one layer of pears on the bottom of the dish. Mix the sugar and cinnamon. Sprinkle a bit of the cinnamon and sugar on the first layer of pears. Add another layers of pears, sprinkle with cinnamon and sugar. Repeat layers, using the rest of the pears. Cover the pears with the melted butter. Cover with aluminum foil. Bake for 15 to 20 minutes. Remove the foil and bake for an additional 5 or 10 minutes. Serve the pears warm on individual dishes. Pour the cream over the pears.

Note: You can easily use low or non-fat plain or flavored yogurt on the pears, as a substitute for the cream.
