Carol and Eugene Aicholtz joined in Holy Matrimony in 1965. They expressed their special love with seven children. Each of these expressions of love has grown up on the little farm along with tons of beef cattle every year. Sitting at the kitchen table I could hear the giggles of many family dinners echoing from the walls. Giggles we all know are the carbonation of love. Carol tells me the best part of raising your own beef is knowing what was fed to your meat before you cook it. Today Eugene has kind of retired. You know old cattlemen they just can't stay away from the work they love. One of Carol's sons is now working the cattle just like his Dad taught him. I'm sure Carol had some influence too.
Some of you may remember Carol and her troop of young folks running the Aicholtz Dairy Maid in Attica, Ohio. They served the public great ice cream for eleven years, seven days a week from March to October. The people were friendly and we all know honest, hard work never hurt anyone. Carol and Eugene's children have had examples of honest hard work and a special trust in God all of their lives.
I can understand with seven children and a husband, to cook three meals a day, seven days a week, how you would learn to become a great cook (lot's of practice). For the last 6 ½ years Carol has cooked for the Backroads Diner in Bloomville, Ohio. Carol tells me everyone at Backroads Diner is like family. The "Boss" is an extra special person. Backroads Diner advertises food like Grandma used to make. I'll tell you this, if the aroma coming from Carol's kitchen was any indication of the quality of food served at Backwoods Diner, I'm going to Bloomville soon.
Carol is a greeter and also helps with the Funeral Dinners at Our Lady of Hope Catholic Church in Attica, Ohio. The church gals like to tease her, "there are no funerals on Carol's day off." Carol's Faith is the quiet kind that provides a calm example of how to face a challenge and "Get R Done" with God's help. Y'all can tell Carol and God are on a first name basis.
When I called to make the appointment to meet with Carol she said "I really haven't done anything special." I'm sorry to disagree ma'am! You have brought seven children into the world. You have shown them with examples of love, how to live a great life filled with God's blessings in a quiet assertive manner. You have faced the challenges of running a business, taking care of a husband and seven children with love and happiness. You are still being productive and still giving examples of love, hard work, and trust in God to all that know you. And, you still have the time to provide these examples to the next generation of love-filled Grandchildren as they grow up.
Today our country is facing a huge economic problem. It's folks like Carol Aicholtz that keep giving us the examples of hard work and love that will cure this problem. Carol and Eugene Aicholtz keep doing what they do best. Putting one foot in front of the other and doing the next right thing.
Many years ago an ancient Navajo Shaman told me "Folks may forget what I've said, folks may forget what I've done, but folks will always remember how I made them feel." When I pulled out of the driveway at Carol Aicholtz home, I felt happy and joy filled to have spent a short time getting to know just a wee bit about this amazing gal....Mizpah ;-}}>
