Serves 8
1 9-inch refrigerated pie crust
6 Tablespoons Grated parmesan cheese
10 oz. Fresh spinach, trimmed and steamed (barely wilted)
1 cup Small curd cottage cheese
6 oz. Colby-jack cheese cut into ½-inch cubes
4 Eggs, beaten
3 Tablespoons Minced onion
3 Tablespoons Sour cream
1 teaspoon Garlic salt

Place pie crust into a 9-inch pie pan (unless purchased already in pan). Crimp the edges decoratively.

In a large bowl, combine cheeses, eggs, onion, sour cream and garlic salt. Stir in spinach until well combined.

Pour mixture into prepared crust. Bake uncovered in preheated 350-degree oven for 35 minutes or until set. Let stand 5 minutes before serving.
Tip
You don't necessarily have to wilt the spinach, but the texture of the pie (especially the surface) is much better if the spinach is a bit wilted before cooking. A small package of frozen spinach, thawed and drained, can also be substituted.
