Apple Cinnamon Pancakes are an easy but impressive recipe to make for Mother's Day brunch. Rather than several pancakes, this recipe makes one large pancake that serves six.

Ingredients

Serves 6
1 tbsp. Butter
1/8 cup Water
1/2 cup Sugar
1/4 cup Sugar
4 Granny Smith apples, peeled, cored and thinly sliced
3 Eggs
3/4 cup Milk
3/4 cup Flour
1/2 tsp. Cinnamon
1/4 tsp. Salt

Preheat the oven to 450 degrees. In a 12" skillet, melt the butter and stir in the water and 1/2 cup of sugar over medium heat until it comes to a boil. Add the apples and cook for about 10 minutes or until the apples become soft.

In a blender, blend together the 1/4 cup sugar, eggs, flour, milk, cinnamon and salt.

Pour the flour, milk and egg mixture into the skillet over the apples and place it into the preheated oven. Bake for 15 minutes, or until the pancake is puffy and lightly browned. Cut into wedges and serve immediately.
Tip
Use a cast iron skillet or a skillet with an oven-proof handle.
