Mother's Day Brunch Recipes

It is always nice to wake up to something cooking or baking on Mother's Day. The smell of your favorite foods drift through the air and you wonder exactly what is cooking but, you are told you will have to wait for it is a surprise. So you wait to be pleasantly surprised with your favorites by your children or your husband.

Yummy Rolls

1 pkg. crescent rolls
8 jumbo marshmallows
1/4 cup sugar
1 to 1 1/2 tsp. cinnamon
3 tsp. melted butter

Roll marshmallows in butter until all coated. Then roll in the sugar-cinnamon mixture until coated. Place a marshmallow in the center of the triangle crescent roll and wrap around the marshmallow, making sure the edges are all sealed (we don't want any marshmallow oozing out.
Bake according to the directions on the package . Serve warm, icing can be drizzled on if you like

Icing

powder sugar and milk. just add a little milk at a time and stir until mixed, if too runny add more powdered sugar. Then drizzle with a teaspoon over your yummy rolls.

What a way to start out your Homemade Mother's Day Brunch.

Raspberry Kuchen Torte

Line the bottom and sides of a 9 x 13 inch cake pan with the following pie cruse. Mix in pan and press to make the crust:

1 1/2 cups flour
1/2 cup vegetable oil
1 tsp. salt
2 Tbsp. milk
1 1/2 tsp. sugar

Mix 1/2 cup sugar and 1 tsp. flour together. Sprinkle some of this mixture over the crust and alternate with layers of raspberries (about 1 1/2 quarts). Bake in 450 degree oven for 15 minutes. Beat 3 eggs, and add 2 Tbsp. sugar and 3/4 to 1 cup Half & Half. Pour over berry mixture and bake at 350 degrees for 30 minutes.

You can use the egg whites to make a meringue for the topping or you can sprinkle with coconut. I prefer to just mix up a strudel topping.

Hamburger Box Omelet

1 Styrofoam hamburger box from a fast-food restaurant or a you can get them at Sam's Club too.
Paprika
1/4 cup green pepper(optional)
1 green onion, thinly sliced, including top greens(optional)
1/4 cup diced cooked ham((you can use bacon that has been cooked and crumbled)
2 eggs, well beaten
2 Tbsp. milk
Salt and pepper
1 Tbsp. grated cheddar cheese(use your favorite cheeses)

(you can make what ever type omelet Mom likes, such as adding mushrooms, sausage, turkey, broccoli, what ever her heart desires)

Spray inside bottom and lid of box with Pam. Sprinkle with paprika. Place green pepper and onion in on cup glass measuring cup. Cover with plastic wrap and microwave on high for 2 minute. Add ham and recover; set aside. Beat eggs together with milk, salt and pepper. Pour mixture equally into bottom and lid of prepared box. Microwave on 50% power or medium for 2 to 2 1/2 minutes or until almost set (Times vary per microwave). Quickly close the lid to flip the of omelet over. Lock lid and microwave at 50% power for 2 minute. Serve. Recipe makes 1 omelet.

No dirty fry pans, just throw box away.

Tangy Punch

1/2 cup lemon juice
1 tall can pineapple juice
1/2 cup maraschino cherry juice
2 (12 oz) cans frozen orange juice and water as directed on can
2 quarts 50/50

Combine fruit juices and water. Shortly before serving add soda and ice ring (if you would like a less tart punch, substitute 1 quart of white soda for 1 quart of 50/50)

You can cut the recipe in 1/2.

Extras

You can also cook up some bacon, ham slices, Canadian bacon, Hash browns, and toast.

Now you have a complete Homemade Mother's Day Brunch just for Mom.
