Mother's Day Brunch Recipes - Jewelled Punch

This is another very easy recipe that the kids love to make and drink. It is very quick to make and assemble and makes a beautiful centrepiece for the table for a Mother's Day Brunch. Basically the recipe is for a clear, fizzy and non-alcoholic punch that everyone can drink! The jewels are ice cubes containing fruit such as strawberries, blueberries and raspberries. Mom will just love this incredibly simple and beautiful punch!

The ice cubes need to made the day before and frozen overnight. The drink can be made on Mother's Day.

Ingredients for ice cubes

1 small punnet strawberries
1 small punnet raspberries
1 small punnet blueberries
water

3 ice cube trays

Method for ice cubes

Cut up the strawberries into pieces. Put them in to one of the ice cube trays. Fill it with water. Carefully carry it and put it in the freezer. (or ask an adult to help)

Put one or two blueberries into each of the boxes on the second ice cube tray). Fill it with water. Carefully carry it and put it in the freezer.

Put the raspberries into the third ice cube tray. Fill it with water and again carefully carry it and put it in the freezer.

Ingredients for Punch

A large 3 litre glass bowl - a glass bowl makes the presentation even prettier.

A ladle

Glasses

Then

Either

A. Approximately 300ml of elderflower cordial (elderflower cordial is wonderful for a brunch because it is so light and it goes with just about any Mother's Day brunch recipe. It is also perfect as it is springtime!

2 litres of soda water.

Or

B. 2 litres of sparkling grape juice (non alcoholic)

Or

C. 2 litres of fizzy lemonade. Old fashioned lemonade is best.

Method to make the Mother's Day Jewelled Punch

On Mother's Day put the glass bowl in the center of the table. Open the bottle of your choice and pour it into the bowl.

Or, if you decide to use the elderflower cordial recipe, pour 300ml of elderflower cordial into the bowl. Add 2 litres of soda water. Stir thoroughly. Using a clean spoon taste this, or ask an adult. Then if necessary add a little more cordial and stir again.

And now its time to add the jewels!!

Simply take the 3 ice cube trays out of the freezer and empty the ice cubes into the punch bowl, taking care not to splash!! The ice cubes and fruit will sparkle like jewels

Put the ladle next to the glass bowl, and put the glases on the table. Put the rest of the food onthe table too!

The punch is ready to serve.

You'll be proud as punch of this punch. And Mom will be equally proud of her clever children making this spectacular Mother's Day Brunch drink!
