Mother's Day Homemade Brunch Recipes and Drinks

When it comes to brunch recipes, you may want to take simple or classic dishes and dress them up with special toppings and accents. Brunch foods like pancakes, waffles, and crepes are always a treat, but you may want to add things like fresh fruit, fruit compote (which can be made by adding your favorite fruit to a sugar syrup and sauteeing it over medium heat), or cinnamon and powered sugar to the dish to give it an extra kick. If you need a little help making crepes or want to find the right recipe for Belgian waffles, you may want to check out sites like www.recipezaar.com. You may also want to add different items to the pancake or crepe batter, such as black walnuts, ricotta cheese, bananas and chocolate chips for a delicious breakfast that Mom won't forget.

Omelettes are also great brunch food, and you can add Mom's favorite toppings to this dish. Different varieties of mushrooms can be used in omelettes, and you can fill the egg dish with all types of fresh vegetables as well if Mom is trying to watch her diet--tomatoes, broccoli and even corn taste great in an omelette, and if you're using veggies, you may want to prepare asparagus with hollandaise sauce as a side dish. For tips and ideas on how to create an omellette or scrambler dishes for Mother's day brunch, check out www.lhj.com to find great pics on how to plate your omelette and add great plate garnishes.

If Mom is vegan, you can still prepare a great brunch for her. Bob's Red Mill has a great pancake and waffle mix, and you can add exotic fruits to the meal, like pomegranates and papaya to make brunch extra healthy and special. 'Scrambled eggs' can be made out of medium firm tofu, and seasoning the 'eggs' with mushrooms, onions and peppers is sure to be a hit. If you want to make semi-sweet desserts for Mom's brunch, you can also check out www.fatfreevegan.com.

As far as drinks go, fresh squeezed fruit juice is always great. Try preparing Mom a spritzer made of grapefruit juice, papaya nectar, and club soda, or use peach nectar and champagne to make a bellini that will go well with the crepes you've prepared. And, be sure to include fresh cut flowers and a card telling Mom how much you love her. :)
