Omelettes are also great brunch food, and you can add Mom's favorite toppings to this dish. Different varieties of mushrooms can be used in omelettes, and you can fill the egg dish with all types of fresh vegetables as well if Mom is trying to watch her diet--tomatoes, broccoli and even corn taste great in an omelette, and if you're using veggies, you may want to prepare asparagus with hollandaise sauce as a side dish. If Mom is vegan, you can still prepare a great brunch for her.
