Mother's Day Recipes - Mini Chocolate Surprise Cup Cakes

This is a very easy and delicious recipe that children love to make for Mother's Day. There are only a few ingredients and the recipe is pretty much bullet proof!! The surprise is the chocolate button cunningly hidden in the middle of the cup cake.

Ask your spouse or an older child to supervise the younger children whilst they're making the chocolate cup cakes. And mom, don't forget to put any spare cakes in their lunch boxes the next day!

Ingredients

200g self raising flour
200g white granulated sugar
200g melted butter
2 eggs
2 teaspoons pure vanilla essence
200ml milk

30 white or dark chocolate melting buttons - or a mixture of both.

2 Mini muffin tins
Approximately 30 mini paper cake cases

Preheat oven to 180C / 350F for at least 10 minutes. You must preheat your oven as a cold oven will affect the final result of your mini chocolate surprise cup cakes.

Method (for children to make)

Put one paper muffin case into each of the muffin cups.

Carefully measure the flour and sugar. Put into a large mixing bowl. Crack two eggs and add to bowl.

Measure 200ml of milk in a measuring jug and pour it into the bowl.

Measure 2 teaspoons of pure vanilla essence and add to bowl.

Measure the butter and melt it either in a pot or in the microwave. (or get an adult to do this for you). Pour into the bowl.

Using a large spoon, stir all ingredients together for about 30 seconds until everything has mixed together. The mixture should look smooth with no lumps.

Spoon the mixture into each of the paper cup cake cases. Fill each cake case about ¾ of the way up. (keep space to give the cup cakes room to rise).

Put one chocolate melting button on top of the mixture of each cake. (This is the surprise part. As the cake mixture rises in the oven, the chocolate button stays in the middle, so that when Mom bites into the cup cake she'll find a little chocolate surprise!)

Carefully put the mini chocolate cup cakes in the oven and bake for 18-20 minutes.

Ask an adult to help you to remove the cup cakes from the oven.

Leave the cakes to cool for at least 30 minutes.

When cool remove the mini chocolate surprise cup cakes from the tin.

Put them carefully on a pretty cake plate. And give to your mom as a special treat for Mother's day.

And don't forget to clean up - because that's another present that all Moms love on Mother's day!
