MSG Free Pot Stickers for Chinese New Year!

Kate Schum
The best part of the Chinese New Year is the food to many people! Even if you aren't Chinese and would like to do something nice for one of your friends, this article should help you with it. Dumplings represent good luck, good fortune, and the best part-family togetherness. The family favorite in my household is Chinese Pot Stickers. They are sautéed dumplings and boy are they delicious!

You are going to need 4 ½ cups of flour, 9 oz of lean boneless pork that is minced, 1 tablespoon of soy sauce, 5 teaspoons of rice wine, 1 tablespoon of chopped ginger, 1 teaspoon of salt, 3 ½ oz of hotbed leeks, 3 ½ oz sesame oil, and 1 teaspoon of flour that is mixed with 2 tablespoons of water.

The first step is to mix together the meat, soy sauce, rice wine, ginger, and salt. While mixing together pour water slowly in until the pork becomes sticky. The amount of water should be no more than 5 oz. Then, add your leeks and sesame seed oil. Blend the mixture and divide it up in sixty portions. Put the insides to the side, let's work on the outside.

Take the flour and stir 7 oz of water into it. Knead the flour until it is thin and stretchable. Also, make sure that it is smooth. Give it a break for a half an hour, then take out your favorite roller! Roll it into a large cylinder and cut it into sixty portions. Next, you will want to flatten each piece into a circle that is 3 inches wide. You will want to put a portion of the mixture you made previously and fold it over. Pinch the edges together to seal properly. You will do this fifty-nine more times until everything is gone.

Great job so far! Now, get out your biggest pan! Put the uncooked stickers into it and heat until they are almost cooked completely. Add enough water to fill up 1/3rd of the way and cover. You will need to cook with high heat until the water is almost completely absorbed into the stickers. Make the left over water so it is around the pouches and then cover the pan again to sauté them on a low heat this time. Keep it cooking until a little crispy and linked together. Put a little sesame oil on the dumplings and then sauté again until they are brown on the bottom. Make sure that you do this in batches, do not try to do them all at once as sixty pot stickers sure are a lot! Serve with your preferred sauce and enjoy!
