My Aunt Bonnie's Apple Cake

The Walnuts Are the Secret

Rose Richmond
Aunt Bonnie's Apple Cake was always the toast of the holidays in my family. Here is her recipe...Make it and enjoy!
  • 1 cup butter, room temperature
  • 2 cups granulted sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups peeled chopped fresh apples
  • 1 cup coarsely chopped walnuts
Preparing The Cake:In a mixing bowl, cream together the butter and sugar until light. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Sift together the flour, baking powder, baking soda, and salt, and stir in the creamed butter mixture.

Stir in the chopped apples and walnuts. Spread the cake batter into a greased and floured 13x9-inch baking pan, or do what I do and use a cast iron dutch oven, as in the picture, and bake in a 350° oven for 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool for at least 30 minutes before serving. Serve with whipped cream or a caramel sauce. The caramel sauce is off the chain.....Enjoy fall....bake an apple cake.

Ha! I and my roommate are going up to Julian, CA in a week or so for some fresh apples. This recipe will really come in handy afterward. Thanks a bunch, ROse! :o)

I don't use the 13 x 9 pan, I like to use my grandmother's cast iron dutch oven. Looks pretty much like the picture. Good eating.
