Ingredients

Serves 20
4 cups Flour
6 Eggs
1 teaspoon Salt
2 tablespoons Olive Oil
2 teaspoons Baking Powder
1 teaspoon Almond Extract
1 teaspoon Nutmeg
1 1/2 tablespoons Sugar
12 oz. Honey
1/2 bottle Corn Oil
1/2 cup Nut Meats (optional)
1/2 cup Glaced Cherries (optional)
1/2 cup Chopped Fruits (optional)

Sift flour and combine with salt, baking powder and nutmeg in a large bowl. In a separate bowl beat the eggs lightly and mix with the olive oil and extract. Add these ingredients to the flour mixture that's in the large bowl, blending well with your hands. Knead the dough on a lightly floured cutting board. Cut off 2-3 inch chunks and shape into long, thin rope. Cut the rope into small bits and dust each bit with a small amount of flour to keep them from sticking together when frying. Fill a large, tall pot halfway with corn oil and toss the small bits into the hot corn oil until each is golden brown. Use a scooper/spoon with holes/slots at the bottom to remove the small batches from the oil. Continue until all the dough is used. Place the fried small bits in a paper bag to absorb the excess oil.

Heat honey and sugar to a slow boil in a heavy skillet. Add the fried bits (about 2 cups at a time). Coat the fried bits well with the boiling honey. Remove the coated bits with the same slotted scooper/spoon and place them on a platter, or foiled plates forming a mound (hill). Decorate with nuts, cherries, colored sprinkles, or Christmas candies.
