Best Lahtke Recipe
3 Basic Starchy Potatoes
3 Tbls. Milk
1 egg - beaten
1/2 tsp baking powder
salt and pepper to taste
high heat oil for frying
First we wash and grate the potatoes. Some people like to peel them, but we tend to like the skin on. Press the grated potatoes in between paper towles or tea towles to remove the moisture. Then add the milk and egg and baking powder mixing together well.
Heat a deep sided skillet over high heat with about 1" of oil, until hot -- not smoking. Carefully drop the potato mix by the spoonful into the hot oil and tap the potatoes down a bit. Fry until golden brown on each side, you want them crispy on the outside and nice and tender in the middle. Takes about 5 minutes. Remove and drain on paper towels. If you are doing a large batch, you can keep them hot in the oven heated to 350 degrees, but they are best served fresh and hot with a side of applesauce or sour cream.
Sour Cream Lahtkes
3 Potatoes
2 Tbls. sour cream
1 Tbls. Milk
1 egg - beaten
Follow same procedure as above - serve hot and enjoy!
Onion Latkes/Pancakes
3 Potatoes
1/2 small onion - minced
1/2 c. flour
2 eggs - beaten
1/2 tsp baking powder
2 Tbls Milk
salt and pepper to taste
Again, same procedure as above. If you wish to make this one gluten free / dairy free, simply replace the flour with rice flour- it works wonderfully! To make it dairy free, exchange the Milk for an extra egg.
