My Favorite Comfort Foods

Comfort food has been defined asa food that brings comfort. Perhaps it is something we ate as a child that brings us a feeling we rediscovered the fountain of youth, at least till we get on the scale the next morning. Perhaps it is a dish we had while on our honeymoon or other special vacation. Allowing us to return to this illusion of returning to that time of joy. Perhaps it's a dish your spouse has shared with you as comfort food from their youth. Perhaps for you like me it's just something that tastes good but isn't good for me even in moderation. Let's roll up our sleeves, take off our rings, wash out hands and make some comfort food. None of these recipes are low fat or low calorie. All of these recipes taste good and are not good for you even in moderation. YES! I still love 'em all.

Chicken Fried Bacon

Ingredients:

Thick cut deli bacon

buttermilk

seasoned flour

Directions;

Preheat deep fryer or other fryer to 375. Dip bacon in seasoned flour, then dip in buttermilk, then dip in season flour again. Deep fry till golden brown. Serve with a smile.

Terry's Spinach Casserole

Ingredients:

4- 15oz cans spinach drained

1 envelope French onion soup mix

1-16oz sour cream

1 ½ pounds shredded cheddar cheese

1 teaspoon garlic powder

Directions:

Preheat oven 350. Mix spinach, French onion soup mix, sour cream, garlic powder and set aside. Grease a 9x13 baking dish spoon half spinach mixture in and spread evenly on bottom. Cover with half the cheese, spoon remaining spinach mixture evenly over this and top with remaining cheese. Bake for 1 hour uncovered.

Spinach Alfredo Pizza

Ingredients:

15oz can spinach drained, squeezed dry and chopped

½ jar Ragu Alfredo Sauce

small onion thin sliced

12" pizza crust (Pillsbury)

Italian seasoning

olive oil

1 cup grated cheese (taco mix is my favorite)

Directions:

Preheat oven to 400. Mix spinach, Alfredo sauce and onions and set aside. Place pizza crust on pan, brush with olive oil and sprinkle Italian seasoning. Spread Alfredo mixture over this leave about ½ " crust around edge. Sprinkle cheese over entire area bake 30-35min. Allow to stand 5mln before cutting.

Note:

To make a family size pizza double everything and place on a jelly roll pan.(aka cookie sheet with lip)

Halusky

Ingredients:

2-3 Tablespoons butter

1 pound bacon diced

1 softball sized onion diced

2-3 Tablespoon diced garlic

½ medium head cabbage diced

8oz can mushrooms stems and pieces drained

1 pound frozen peas

salt and pepper to taste

1 pound pasta cooked to pkg directions

1 cup pasta water

1 pound grated cheese (taco mix)

Directions:

Melt butter in deep heavy bottom pan (dutch oven) Cook on high uncovered. add bacon, onion, garlic, cabbage, mushrooms, peas, salt, and pepper, stir every 10 min till cabbage and onions are soft. Add cooked pasta and stir till incorporated. Add cheese and pasta water stir till cheese is completely melted. Serve with butter bread ans ice cold beverages.

Note:

Reheats well, is excellent cold just like cold pizza. ER Nurses love it so it must be good for you!
