Skewers (wooden or metal .... doesn't make a difference)
Assorted fruit (strawberries, pineapple, peaches, grapes, anything easy to thread on a skewer)
Assorted cheese (anything you can buy in chunk; I like cheddar, monterey jack, colby jack, or mozzarella)
Depending on how many kabobs you're making, plan on 3-4 pieces each of fruit and cheese per kabob. Cut your fruit into bite-size pieces (strawberries and pineapple chunks can stay whole) and pour into a bowl. Pour enough orange juice over fruit just to coat it, but not so much that it's dripping off. This will keep your fruit fresh without making your guests pucker if you were to use lemon juice, and also gives it more of a fruity flair. Alternate stringing on fruit and cheese until you have an inch or so from each end of the skewer. Place on a nice long platter or cookie sheet and refrigerate until ready to serve!
Speedy Veggie Kabobs
Skewers (again, your preference)
Assorted veggies (my favorites here are cherry tomatoes, mushrooms, peppers, and olives)
Assorted cheese (the sky really is the limit here; my favorites for this recipe are pepperjack and bleu)
Bread (the ones I've had the best luck with are those you find in the bakery at the grocery store that are likely labeled something along the lines of 'crusty italian bread')

Cucumber Sammies
Bread (marble rye really works best for this but it can be hard to find ... if you can't find marble rye, use a nice flavored bread, probably from your bakery)
Cucumber, sliced
Cream cheese (It's fun to experiment with different flavors if you want! Try garden herb, chive, or green olive for this recipe if you're daring).
Hummus (this can usually be found near the deli; it's a sort of dip made from mashed chick peas, garlic, lemon juice, and salt, and sometimes other flavors. For this recipe, it's easier to just buy a premade tub, like Athenos).
Bean sprouts, optional
Sunflower seeds, optional
Spread each piece of bread with cream cheese, then top with hummus, followed by sunflower seeds (if you choose), cucumers, and bean sprouts (again, optional). This is fun to eat open-faced, but good as a sandwich too! If you do make a full sandwich, make sure you spread cream cheese on the other half of bread as well so everything sticks together.
