Slow Cooker Weight Watchers Recipes with Point Value

Here are some of my favorite Weight Watchers Crock-pot Recipes. These are very easy recipes.

* Barbecue Pork

2 pounds boneless pork top loin
1 cup onions- chopped
¾ cup diet cola
¾ cup barbecue sauce

Add all ingredients in a crock-pot. Cover. Cook on high for 5-6 hours or until meat is very tended. Once finished cooking, drain crock-pot and slice pork loin.

Recipe makes 8 servings. Each servings are 4 points.

* Tuna Noodle Casserole

2 cans cream of celery soup
1/3 cup dry sherry
2/3 cup skim milk
2 tablespoons parsley flaked
10 ounces frozen peas
2 cans tuna; drained
10 ounces egg noodles; cooked
2 tablespoons light butter
Salt and pepper to taste

Combine cream of celery soup, sherry, milk, parsley flakes, peas and tuna. Add noodles. Add to grease crock-pot. Add butter on top. Cover crock-pot and cook on low for 7-9 hours.

Makes 4 servings. Each servings 8 points.

* Baked Beans

½ medium onion; chopped
5 slices turkey bacon; chopped
4 ounces extra lean ground beef
1 can vegetarian beans in tomato sauce (16 ounces)
1 can vegetarian beans (16 ounces)
1 can red kidney beans (16 ounces); rinsed and drained
½ cup tomato sauce
2 tablespoons brown sugar
1 to 2 teaspoon(s) liquid smoke
½ teaspoon fat free maple syrup

Sauté onions and bacon. Cook until onions are tender. Add ground beef. Cook until browned.

Add onions, bacon and ground beef to crock-pot. Add all beans. Net add tomato sauce, brown sugar, liquid smoke and maple syrup.

Cover crock-pot. Cook on medium heat for 4-6 hours. Stir occasionally.

Makes 10 servings . Each serving is 3 points.

* Cheese Enchiladas

1 pound extra lean ground beef
1 cup onion; chopped
½ green bell pepper; chopped
1 can (16 ounces) pinto beans; drained
1 small can tomato sauce
1 package enchilada dry sauce mixture
1/3 cup water
½ teaspoon salt
½ teaspoon pepper
1 cup shredded low fat cheddar cheese
6 flour tortillas

Cook beef, onions and bell pepper until browned; drain. In a bowl, mix all other ingredients (except the flour tortillas). Leave about 1/8 of the cheese out to top the casserole off. Stir. In a crock-pot placed about ¾ cup of the beef mixture to the bottom of the crock-pot. Add a flour tortilla to top. Add a second layer of the beef mixture. Top with another flour tortilla. Continue doing this until there is no beef mixture left. Top off with a flour tortilla. Top flour tortilla with remaining cheese.

Cook on low for 7 hours.

Makes six servings. Each serving is 6 points each.
