Grandma's Easy Broccoli Cauliflower Casserole Recipe is another recipe that I'm posting for my daughters. They sometimes crave familiar comfort food while away at college and phone home for directions. Telling them how to make something is fun but sometimes it's hard to get to the recipe box.
I figure posting recipes online for things like Grandma's Easy Broccoli Cauliflower Casserole recipe and the Easy Apple Dumpling Recipe for College Students online will make my life easier. Kids remember where they put their computers. They won't remember what they did with a recipe card.
Plus, there's the off chance that someone else will want to make it. This is a simple dish that most everyone likes. It's been a hit at the potluck dinners we're always having at church. At home the kids like it. The casserole is easily warmed up and is good for lunch the next day. We usually don't have leftovers beyond that.
So for my kids and anyone else who's interested, here's how to make Grandma's Easy Broccoli Cauliflower Casserole.
First, the utensils:
9x13 casserole dish
Heavy slotted spoon
Medium mixing bowl
Medium saucepan (a lid helps but isn't required)
Ingredients that are needed for Grandma's Easy Broccoli Cauliflower recipe include:
1 sleeve of Ritz crackers (4 oz.)
1 stick of margarine
1 large bag of thawed frozen cauliflower
1 large bag of thawed frozen broccoli
1 ½ cups of canned evaporated milk or shelf stable milk
½ cup mayo
½ cup sour cream
1 cup shredded cheese
Here's how to make Grandma's Easy Broccoli Cauliflower recipe
Pre-cook both the cauliflower and the broccoli
Place them in a 9Ã-13 casserole dish and spread evenly to cover the bottom of the dish.
Melt the margarine and mix it with crushed crackers. Using the slotted spoon, keep stirring until the mixture is moist.
In a saucepan over medium heat, mix milk, mayo and cheddar cheese.
Pour the milk mixture mentioned above over hot cauliflower and broccoli. Stir gently to mix the ingredients well.
Next add the cracker/butter mixture by crumbling it evenly on top of the casserole.
Since the vegetables and milk mixture in Grandma's Easy Broccoli Cauliflower recipe are already cooked, all you need to do is put the casserole in the oven under the broiler. Leave it there until it is golden brown. (Note to college students: This only takes a few minutes so don't go off and leave it in the oven.)
Remove when golden brown and serve hot. This should make 12 servings.
