Nacho Cheese Chicken Soup and Fried Tortilla Treat Recipes

A Chilly Weather Meal

On a day when most of my family was outside wielding snow shovels, I came up with this warming supper idea. With Nacho Cheese Chicken Soup as a main entree and Fried Tortilla Treats as dessert, I knew that their tummies would be filled and sweet cravings would be satisfied. What follows are my recipes for this meal.

Nacho Cheese Chicken Soup

1 lb. chicken breast, boneless and skinless, cut into 1/2 inch cubes

2 onions, chopped

2 Tbsp. butter or margarine

1 4-oz. can green chili peppers

3 16-oz. cans chili beans in either mild or hot sauce

4 14.5 oz. cans diced tomatoes with green chilies

2 tsp. garlic powder

3 lbs. 5 oz. nacho cheese sauce

Tabasco sauce (optional, to taste)

Garnishes: chopped chives, sour cream, salsa

Saute chicken cubes and onions in butter or margarine until onion is tender and chicken is cooked through. Combine with all remaining ingredients except cheese sauce in a stock pot or crock pot. Heat on low heat. 15 minutes before serving add cheese sauce and bring to boil, stirring constantly. Garnish as desired. Makes about 24 cups.

Fried Tortilla Treat

2 Tbsp. butter or margarine

6 flour tortillas

1 8-oz. package cream cheese

1 21-oz. can apple pie filling

Spread center of each tortilla with cream cheese. Spoon 1 to 2 tablespoons apple pie filling over the cream cheese. Fold tortilla lengthwise over filling; secure with cream cheese. Fold ends up, securing with cream cheese and making a rectangle-shaped packet.

Melt margarine or butter in frying pan. One by one fry each tortilla packet in frying pan until both sides are lightly browned. Drain on paper towel. Serve warm.

This meal could be accompanied by a green salad and tortilla or corn chips. I found many of my ingredients at the grocery store, but purchased the cheese sauce at a warehouse club/store since that store carried a bulk size 6 lb. 6 oz. can. I purposely made the soup recipe large because when my family likes something it can disappear very quickly, as did the soup and treats the first time I made them. Even when I had leftover soup, we used it for baked potato and hot dog topping and chip dip.

    In answer to Brenda's question: Sam's Club Warehouses sell Nacho cheese sauce in 6.62 pound cans for restaurants and other institutions. The brand name is Bakers and Chefs. I use half of the can for this recipe but have used the entire can sometimes if I want a stock pot full of soup that will last for a couple of days. I first discovered this product when I helped in a 4-H food booth and we served nacho chips and cheese sauce. They kept it heated in a small crock pot.
