Ingredients:
1 avocado
½ tsp chili powder
½ tsp grated onion
1 tsp lemon juice
1 cup low fat sour cream
½ pound lean ground beef
1 tsp chili powder
Salt & pepper
Water
1 bag Touch of Lime Whole Wheat Tortilla Chips
Preparation:
Guacamole
Cut around the avocado pit lengthwise and turn to separate the avocado into two halves. Peel the avocado. Remove the pit. Cut the avocado into small chunks and place in a small bowl; mash. Add chili powder, grated onion and lemon juice and stir to mix. Cover the guacamole and refrigerate.
Cook the ground beef in a small skillet; cutting the beef into small pieces as it cooks. Sprinkle the cooking ground beef with desired amount of salt and pepper. Add the chili powder and stir into beef in skillet. Add water just to moisten the mixture. Remove from heat.
Place tortilla chips onto two salad plates. Sprinkle the chips with the cooked ground beef mixture. Dollop desired amount of sour cream around edges of chips. Place desired amount of guacamole in center of chips. Garnish with a chip in the center of the guacamole if desired.
Makes two servings.
