Nannie's Apple Bourbon Caramel Brownie

This was my Nannie's recipe. This truly a great memory for me and my siblings. We were very fortunate to have such a wonderful person in our lives and to leave this recipe with us. I hope that you enjoy this as much as we did. As children we didn't need the delicious sauce for these to be good, a glass of milk and maybe the ice cream, that was it. As we started growing up and our taste buds were developing, the apple caramel bourbon sauce was a must!

Nannie's Apple Bourbon Caramel Brownie

2 cups of sugar
2 cups of sifted, all- purpose flour
1 tsp. of baking soda
1/4 tsp. of salt
Once cup of Apple butter or butter
1 cup coffee, brewed cool down at room temperature. water can be used instead
1/2 cup buttermilk, regular milk can be substituted
1/3 cup unsweetened cocoa powder
2 eggs
1/2 tsp. vanilla

Combine dry ingredients in mixing bowl. Flour, sugar, baking soda, salt. Set aside.

Combine the 1 cup butter, 1 cup coffee, and 1/3 cup unsweetened cocoa powder in a medium saucepan. Stirring constantly, bringing it to a boil. Remove it aside and add the chocolate mixture to the dry ingredients. Beat with a mixer until completely combined. Now you will add the 2 eggs, 1/2 cup of buttermilk and 1/2 tsp. vanilla and continue to beat for a minute. The batter should be thin. Grease with butter, flowered, two 8x8 inch baking pan. Bake at 350 degrees 20 to 25 minutes. Testing in the center with a toothpick until it comes out clear.
A tip: If you do not have buttermilk but wish to use. Take 1/2 cup of regular milk, add a 1/2 tsp. of lemon juice or white vinegar to it. Let it sit out in room temperature for at least 15 minutes and you will have buttermilk.

Apple Bourbon Caramel Sauce

2 medium to large size Apples, diced or sliced. Granny Smith works well
21/ tsp of bourbon
2 Tbsp of butter
1 cup of sugar
1 cup of boiling water

In a small heavy sauce pan, on very low heat add the sugar and swirl. Do not stir. The sugar will slowly melt and turn a golden color. Now stir in the 1 cup boiling water and 1 tsp. bourbon. Cook for 3 to 4 minutes.

In a heavy skillet, on medium heat ad the 2 tbsp. of butter until melted. Add the diced apples and 11/2tsp. of bourbon. Cook until slightly brown, but not to soft.
A tip: You can cut back on the bourbon or add more. It is a preference of taste. It is just as good without the bourbon.

Top the brownie with apples, pour warm caramel sauce and ad a scoop of vanilla ice cream. You have now met my Nannie.
