National Seafood Month and Fresh Grilled Snapper Recipe

Snapper Charley for National Seafood Month

This is a great quick meal which can be quickly prepared with fresh fish (snapper, amberjack or redfish) on your grill indoors or outdoors to celebrate National Seafood Month. Fish and seafood are not my favorite dishes because I don't like the "fishy taste". This fish recipe passes even my picky taste buds and is delicious.

Grilled Snapper Charley (Charley Davis)

Heat grill for five minutes then turn to low heat

Make an aluminum foil boat to set on the grill

2 snapper filets (optional redfish or amberjack) placed in aluminum boat

Salt and pepper filets

Mix 1/4 cup mayonnaise and 1/4 cup of your favorite BBQ sauce

Add juice of two limes to mixture and spread mixture over filets

Add a few pats of butter

1 medium onion sliced and spread over filets

2 medium tomatoes quartered over filets

Slices of red and green bell peppers spread over filets

Close foil boat at the top leaving a slight opening for steam to escape

Cook on grill on low heat for 20 to 30 minutes and enjoy

Optional-- serve with cooked rice covered with the juices from the grilled filets
