New Years Brunch for Six

New Year's Day is a day to recover from New Year's Eve and enjoy informal company. Here are some brunch recipes that will impress your friends and family, but not keep you tied down in the kitchen.

Sausage Mushroom Breakfast Pizza

1lb of sausage

1 8 oz package of crescent rolls

1 cup of frozen has browns thawed

1 cup of shredded cheddar cheese

4 5 oz jars of mushrooms drained

6 eggs beaten

½ cup of milk

1 teaspoon salt

¾ teaspoon pepper

4 tablespoons of Parmesan cheese

Brown the sausage in a large skillet and drain. Set the prepared sausage aside for a while. Separate your dough into 8 triangles. Place the triangle points toward the center of a 12 inch pizza pan. Press the triangles together to form a large circle of dough. Pinch up the sides of the dough to form an edge on you dough. Spink your hash browns, cooked sausage, cheese, and mushrooms over the dough. Beat your eggs with your milk, salt, and pepper over the top of the dough being careful not to overrun the edges of the dough. Sprinkle your parmesan cheese on last. Bake in a preheated 375 degree Fahrenheit oven for 25 minutes.

Serves 6

Walnut Sour Cream Coffee Cake

1 ½ sticks of butter

1 1/2 cups of sugar

2 eggs

1 cup of sour cream

½ teaspoon of vanilla

¼ tsp of salt

1 tablespoon of all spice

1 tsp of baking soda

3 cups of flour

Walnut Topping

4 tablespoons of brown sugar

2 teaspoons of cinnamon

½ cup of crushed walnuts

Cream the butter and sugar together. Then add your beaten egg. You then should fold in your vanilla and sour cream. Sift the flour baking powder and salt. Fold into creamed mixture. Use a 9 in round cake pan and pour in half the batter. Mix up you is topping ingredients and use has on top of the batter. Fold in the rest of the batter on the first layer of the topping. Then top the rest of the batter with the remaining topping. Bake 1 hour in a 325 degree Fahrenheit oven.

Serves 6

Hot Spiced Fruit

1 can slice peaches

1 large can pineapple chunks.

1 small can of pear halves

1 small can of plums

1 small jar of mar chino cherries

1 medium jar of apple sauce

¾ cup of white raisins

1 stick of butter

1 cup dark brown sugar

2 tablespoons of pumpkin pie spice

2 tablespoons of Orange extract

½ cup shredded cheddar

Make syrup out of the butter, apple sauce and pumpkin pie spice, and orange extract to pour over fruit. Drain the fruit and mix it in a large casserole dish. Pour hot applesauce syrup over the fruit. Bake in a 350 degree Fahrenheit oven for 35 minutes. Pull out casserole and add your shredded cheddar and bake 5 more minute. Casserole should be bubbly and brown.

New Year Brandy Wassail Bowl

½ cup lemon juice

1 cup orange juice

1 cup unsweetened pineapple juice

2 cups apple cider

1 cup peach brandy

1 tsp of crushed cloves

1 stick of cannoning

¼ cup of sugar

Heat all the liquid ingredients in a stain steel or enamel stock pot. You should use a cheese cloth to make a spice bag to heat the cloves and cinnamon in or place them directly in the Wassail and drain the mixture before serving. When the wassail comes to a slow boil let it boil about 5 minute. Turn off the heat and add the sugar. The sugar should dissolve. Cover the pan and let it simmer on lo or warm for one hour before serving. Makes about 12 punch sized cup servings.
