New Year's Eve Rum Cocktail #1:Great White
1 1/2 oz. Spiced Rum (Captain Morgan's)
3/4 oz. Vanilla syrup (like the kind used in coffee drinks)
3 oz. coconut milk
Dash of nutmeg or cinnamon
Combine the rum, vanilla syrup, and coconut milk in a shaker with ice. Shake to blend. Strain and serve in a Collins or other tall glass filled with ice.
Garnish with nutmeg or cinnamon
New Year's Eve Rum Cocktail #2: Partridge in a Pear Tree
1 ½ oz. Oronoco (Brazilian White Rum)
¼ oz. Pear Liqueur
½ oz. Pomegranate Juice
Combine ingredients in a shaker with ice then and add 1 tbsp champagne.)
New Year's Eve Rum Cocktail #3: Mojito
1/2oz. Light Rum (Bacardi)
1 oz. Lime Juice
1 tsp. Sugar
3-4 Mint Leaves
Club Soda, Sprit, 7-Up
Mix lime juice, mint and sugar in a Collins or highball glass. Stir gently to bruise the mint. Fill glass 3/4 with ice. Add the rum. Top with soda. Stir well.
(Just a side note, last year I found a Bacardi Limon gift set which came with a tall glass and stirrer made especially for making Mojitos. The stirrer had a ball on one end to make the bruising of the mints easier. Also, if you use the holiday Cranberry 7-Up, it adds a nice flavor as well.)
New Year's Even Rum Cocktail #4: Eggnog
1 large egg
1/4 cup fat-free egg substitute
1/4 cup sugar
2 cups fat-free evaporated milk
1 tsp vanilla extract
1/4 cup rum, 80 proof (Bacardi)
1 tsp ground nutmeg
Beat together egg, egg substitute and sugar. Put mixture in a pan on the stovetop and cook over low heat. Stir constantly until thickened slightly and very steamy. Do not let eggnog boil. Warm milk until it steams but does not boil. Very gradually beat milk into eggs. Stir in vanilla and chill completely. Stir in rum. Pour into four glasses and sprinkle a touch of nutmeg on top of each serving. This recipe makes 4 servings.
New Year's Even Rum Cocktail #4: Ski Lift
The Ski Lift takes make you fell like you are in the tropics while still enjoying a warming drink like you are on a ski lift.
1 oz peach schnapps
1 oz coconut rum
hot chocolate mix (prepared)
whipped cream
shredded coconut
Pour the schnapps and rum into an Irish coffee glass. Fill the glass with hot chocolate mix prepared. Top with whipped cream. Sprinkle coconut flakes on top of the whipped cream.
