New York's Maple-Apple Muffins

When I published the basic recipes for the state muffins, I promised to publish anyone's state muffin right away if they would ask. I'm trying to keep them in alphabetical order, but one of my favorites is eager to see hers now. So Kay, here's to you. Hope they're good!

Two of New York state's favorite products are maple syrup and apples. These two tasty items are the highlights of the muffin for New York.

New York's Maple-Apple Muffins start with the basic recipe for Oatmeal Muffins, which can be found at:

Use the Oatmeal Muffin recipe except reduce brown sugar to 1/4 cup and salad oil to 2 Tablespoons.

Add ½ cup maple syrup and ½ cup grated apples to egg/brown sugar mixture. Add 1/2 tsp. cinnamon to dry ingredients. If desired, add ¼ cup chopped nuts.

Using apples makes it possible to have a lower-fat product by reducing the oil, and still have a moist muffin. But after trying them once, you can add more oil the next time if you prefer it.

Assemble and bake as directed. 12 muffins. About 165 calories.
