No Bake Peanut Butter Oatmeal Cookies

This recipe for Chocolate Oatmeal Peanut Butter cookies has been in my family for many, many years. I don't know where it originated but I do know you can find many variations of it in most any church cookbook. My grandmother gave it to me on an old worn index card that I have since copied several times over. You can use chunky or creamy peanut butter or for even more variety try using another 'nut' butter (such as cashew butter).

These Chocolate Oatmeal Peanut Butter cookies are quick and easy but disappear in a hurry. I hope you enjoy them as much as my family does.

Ingredients:

½ Cup Margarine or Butter

2 cups sugar

4 Tbsp. Cocoa Powder

½ Cup Milk

3 Cups Quick Oatmeal

½ Cup Peanut Butter

1 Tbsp. Vanilla

In a large pot melt butter. Add the sugar, milk and cocoa. Bring to a rolling boil. Boil for 3 minutes, stirring to keep from scorching. At the end of 3 minutes remove from heat. Stir in vanilla, peanut butter and oatmeal. Stir together very well. Drop by spoonfuls onto wax paper. Allow to cool. These cookies may be stored in an airtight container (if they last that long).

Note: If you remove from heat before the 3 minutes are up your cookies may not "set" and will be gooey. If this happens don't despair, they still taste good - they are just messy. You will need to eat them with a spoon.
