No bake cookies are not only a fun way to make cookies, it eliminates a few dirty pans. Additionally, no bake cookie recipes are a great way to spend time with your kids as they learn about the kitchen and cooking rules and safety.

These no bake Vanilla Strawberry Apple Cookies are super easy to make.

These are the ingredients you need:

1 (12-ounce) box vanilla wafer cookies (the store brand is fine)
1/2 cup chopped peanuts
1/2 cup confectionary sugar (powdered sugar)
1 cup white chocolate chips
1/2 cup mini marshmallows
2 tablespoons butter
1/3 cup apple juice
1/3 cup strawberry jam or preserves
1/4 cup flaked coconut

Use a food processor to combine vanilla wafers, peanuts and coconut and blend on high speed until they become small crumbs.

Once you have turned the vanilla wafers, chopped peanuts and coconut into crumbs,
transfer into a mixing bowl. Stir in powdered sugar. Now stir in butter, white chocolate chips and marshmallows. Now transfer this mixture into large saucepan over medium heat and stir in strawberry jam, apple juice and corn syrup. Let ingredients melt slightly and remove immediately from heat.

Transfer the dough onto a flat surface such as a cutting board and with hands form one inch size balls. Let the cookies stand for about 15 to 20 minutes to become firm. Once cookie balls are firm, roll the balls into additional powdered sugar and store tightly covered in a food safe container at room temperature.

Makes about 40 cookies.

These no bake cookies are sweet and tasty and best eaten within 3 days. This no bake cookie recipe can have a variation such as substituting crushed pecans or walnuts instead of peanuts. Also, you can use apple jelly instead of strawberry jam or preserves to make an entirely different tasting no bake cookie recipe.
