Traditional Bread stuffing
3 cups chopped onion
3 cups chopped celery
1 stick of butter or margarine
3-tsp poultry seasoning
2 large cans of chicken broth
2 eggs beaten well
2 loafs white bread (break into small pieces and allow to dry at room temp over night or place in a warm oven for a couple hours to dry)
Place celery and onions in a skillet with the butter and cook until the onions and celery are almost tender. Make sure to keep the onions from browning.
Get a big cake pan or roasting pan and grease, then place in the bread, add the onions and celery. Add the poultry seasoning, and then add the chicken broth slowly while stirring the stuffing mixture. Add enough to moisten the bread but not make it soupy. Add the egg mixture and mix well.
If you were going to stuff your turkey now would be the time to do this. If not place the stuffing in the oven to bake at 350 degrees for about an hour. I cover mine in aluminum foil until the last 15 Min's or so to allow for the stuffing to get a golden color on top.
Another variation of the great stuffing recipe is to use different types of bread as shown here in the cornbread-stuffing recipe.
Cornbread Stuffing
7 slices dried white bread
1 package saltine crackers
1 stick of butter
2 cups celery chopped
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Ground black pepper (added for taste)
1-teaspoon sage 1-tablespoon poultry seasoning
5 eggs, beaten
Cornbread (recipe follows or you can use your favorite)
In a large bowl combine the bread, cornbread, and crackers, sit aside.
Cook the celery and the onions in a skillet with the butter until just tender.
Add the celery and onions to the bread mixture. Add the Sage and poultry seasoning along with salt and pepper to taste. Now add the chicken stock and stir well. Next add the beaten eggs and mix well.
Place in a greased pan and bake at 350 degrees for one hour.
Cornbread recipe
1-cup self-rising cornmeal
1/2-cup self-rising flour
3/4-cup buttermilk
2 eggs
2 tablespoons vegetable oil
Combine all the ingredients and mix well. Pour batter into a shallow greased baking pan and bake at 350 degrees for twenty to twenty-five minutes.
Here is a twist on the usual stuffing recipe by using sausage and apples.
Apple and Sausage Stuffing
16 slices dried and cubed white bread
1-pound pork sausage
1 large onion (chopped)
2 Large apples, peeled, cored and chopped up
1/cup water
tsp salt
Cook sausage until brown, Use a slotted spoon and remove the sausage from the skillet and place in bowl with the bread. Drain all but two teaspoons of sausage dripping from the skillet and add the onions to cook until tender. Add water and apples, allowing it to come to a boil, and then pour over the bread and sausage. Stir well to make sure all the ingredients are combined. Add salt to taste. Stuff the turkey or bake in the oven for 45 minutes at 350 degrees.
Whichever stuffing recipe you choose will be a wonderful addition to your Thanksgiving meal. Make sure to follow all safety measures if you choose to stuff your turkey.
