No-Bake Peanut Butter Cocoa Cookies

Rich, Gooey Goodness!!

When I was in grade school, these no-bake "one minute" cookies were a favorite among me and my friends. We would eat them every Tuesday before choir practice (a room mom brought them in). I make them on my own now. They are very rich and will fulfill your sweet tooth. However this can be a bad thing, because like Lay's potato chips, it's impossible to eat just one!

You'll need:

2 c. sugar
1/2 c. cocoa
1/2 c. milk
1/2 c. coconut
1 stick margarine
2 c. quick oatmeal
1/2 c. peanut butter
1 tsp. vanilla

Mix sugar, cocoa, milk and margarine in a saucepan. Boil for one minute after mixture begins to boil. Remove from stove. Mix in oatmeal, peanut butter, coconut, and vanilla. Drop on wax paper by teaspoonfuls. Refrigerate, best if overnight. Makes 3 dozen.
