How to Hard Boil Eggs Perfectly
To start any great deviled egg recipe, learning how to perfectly hard-boil eggs is a must. Though there are cooking aids to help with this task, such as this Egg-Perfect egg timer, it is not necessary to buy any of them.
According to Martha Stewart's website, the way to get perfectly boiled eggs is to start with room temperature eggs. The eggs are placed in a saucepan (in a single layer) and cool water is added until the pan is filled to a level of one inch above the eggs. Using medium heat, the water in the saucepan is slowly brought to a boil. As soon as the water boils, cover the pan and remove from the heat. Wait 12 minutes. Place a colander under cool running water and pour the contents of the pan into the colander. The cool water helps to stop the cooking process. Eggs can be peeled and served immediately or (with shells on) stored in the refrigerator in an airtight container for up to three days.
Note: farm fresh eggs can be difficult to peel when hard boiled. Its best to refrigerate them for about a week first in order to get the optimal results.
Classic Deviled Egg Recipe
Over on the Deviled Eggs website there is a great recipe for the classic version of deviled eggs. This is the version that has been around for decades, complete with fancy, swirled filling.
The classic recipe calls for hard boiled eggs, mayonnaise, dry ground mustard, vinegar, salt, pepper and paprika.
Updated Deviled Egg Recipe
Martha Stewart has an updated deviled egg recipe on her website that eliminates paprika and adds curry. The recipe also calls for homemade mayonnaise (link to recipe for it in the recipe), crème fraiche and Dijon mustard.
Note: homemade mayonnaise is quick and easy to make. Don't let the word "homemade" scare you off.
