Nutty Cucumber Salad

A Refreshing Salad

This is a great refreshing spring and summer side dish. My sister and myself came up with this dish because we were tired of just plain old salads, or plain old cucumber's. I had some cucumber's in the house so we cut them up and started putting everything we could think of in this salad. We didn't want oil and vinegar so we tried limes instead. Well needless to say it came out great and now we make it all the time, especially in the summer and spring. However I am sure it would be good anytime of the year.

This salad was a hit at my fourth of July party last year.

3 cucumber's (medium)
1 medium apple
1 Medium onion
4 limes
1 cup of walnuts ( or what ever is right for you )
1/4 cup of oil
5 packs of Goya seasoning for vegetables

Start by taking a potato peeler and making strips down the cucumber's. Cut off the ends and cut up into quarters, length wise. Then stand the quarter of cucumber up and with a knife cut the seeds out, just slide the knife down the cucumber right behind the seeds. This is an easy way to take seeds out. Once this is done cut the cucumber into about 1/2 inch to 1 inch pieces. Then cut the apple into 8 pieces and then into bit size pieces. Cut up onion into thin slices. Squeeze the limes over salad then put in the 1/4 cup of oil. Mix well. Add the Goya seasoning and walnuts, toss well. " If you are allergic to nuts, of course leave them out."

Optional: Add 1 small box of raisins
Optional: vinegar instead of limes
