No Bake Chocolate Oatmeal Cookies

Chocolate oatmeal cookies are very simple and quick to make. They are loved by both adults and kids. As this recipe is so simple it is an excellent one to make with children. Just make sure that they have clean hands!

Ingredients for No Bake Chocolate Oatmeal Cookies

1 packet malt or digestive biscuits (you can use other dry biscuits but malt or digestives give the best results)
1 cup porridge oats/oatmeal
1 tin condensed milk
1 cup coconut
250g melted butter
2 tablespoons cocoa

Ingredients for coating chocolate oatmeal cookies

Any or all of the following!

1 cup drinking chocolate
1 cup coconut
1 cup icing sugar

Paper cake cases if desired.

Method

Crush biscuits using a food processor. Add the coconut and oats. Process lightly. Put the dry ingredients into a large bowl. Stir the cocoa into the mix. Melt the butter and pour this and the condensed milk into the dry ingredients. Mix the ingredients together until well combined.

Roll the chocolate oatmeal cookies into small balls. Place drinking chocolate/icing sugar/coconut in a small bowl. Roll the chocolate oatmeal cookies in the drinking chocolate. Shake off excess coating. Place the chocolate oatmeal cookies in cake cases. Refrigerate for at least an hour.

I made these chocolate oatmeal cookies with a class of 5 year olds. We put the biscuits inside four strong polythene bags. The kids then jumped on the bags to crush the biscuits. This was the highlight of their lesson - other than the finished cookies of course!
