What you need:
1 c flour
3/4 c packed brown sugar
1 tsp baking soda
2 eggs
1/2 tsp salt
1 tsp vanilla
1/2 tsp cinnamon
3 c oats (quick or old fashioned)
1 c butter, soft
12 oz butterscotch morsels
3/4 c sugar
How to make them:
Preheat oven to 375.
Small bowl - flour, soda, salt & cinnamon - set aside.
In a large bowl - butter, sugar, brown sugar, eggs, and vanilla - beat until creamy. Gradually add flour mixture. Stir in oats and morsels.
Drop by level tablespoons onto ungreased sheets.
7-8 minutes for chewier - 9-10 minutes for crispier.
OR
Spread the dough into greased jellyroll pan. Bake at 375 for 20-25 minutes. Cool completely.
Personally I like making them in a pan so you end up getting oatmeal scotchie squares. They stay really soft and are great to eat by themselves or the way I like them best: crumbled up over ice cream! Either way you make oatmeal scotchies, they are absolutely delicious.
