Oatmeal Macaroon Cookies

This cookie recipe was shared with me by Lawrie, a very dear and long time friend. Oatmeal Macaroon Cookies are a favorite of mine, they are moist and delicious. I have given them for gifts at Christmas many times. Oatmeal Macaroon Cookies are made with brown and white sugar, butter, oatmeal, pecans, eggs, coconut, cinnamon and other ingredients.

Ingredients needed for Oatmeal Macaroon Cookies:
1 cup granulated white sugar
1 cup light brown sugar
2 cups flour
2 cups 3 minute oatmeal
1 cut butter, melted
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 cup pecans
2 eggs, slightly beaten
1 cup coconut
1 teaspoon cinnamon
½ cup granulated white sugar, for dipping

Directions for making Oatmeal Macaroon Cookies:
Step 1: Melt the butter in saucepan or microwave.
Step 2: Mix the brown and granulated white sugar with the melted butter in large mixing bowl.
Step 3: Stir in the flour, oatmeal, baking soda, baking powder, salt, vanilla extract, beaten eggs, coconut, pecans and cinnamon.
Step 4: Mix well.
Step 5: Put in the refrigerator and chill well, this makes it easier to work with dough.
Step 6: Roll in small balls, then dip in ½ cup granulated white sugar.
Step 7: Place on cookie sheet.
Step 8: Bake at 350% F for 8 to 10 minutes.
Step 9: Store in air tight container.

Tips:
You make double or triple recipe for the amount of cookies you desire.

Warning:
Do not over bake cookies.
