OATMEAL PANCAKES

Or Oatmeal Wheat Germ Pancakes

Blend for 5 to 6 seconds in blender or food processor:

4 eggs

1/8 cup oil

¼ teaspoon salt

¾ cup uncooked oatmeal, (or, half oatmeal and half wheat germ)

1 cup cottage cheese

Drop by tablespoons (1/8 cup for 3" pancakes) into hot greased griddle (350 degrees *). Turn pancakes when bubbles appear on surface and cook 1 minute more. Serve with ham, fruit preserves, fresh berries or other fruit.
