A Crude Name for a Grand Muffin

With all the talk of oil these days, I couldn't resist publishing my home state's muffin a bit ahead of its place in line in the state muffin series. The name of these muffins may be a turnoff, but the taste won't be! No, there are no coffee plantations in Oklahoma, nor are any cocoa beans grown in the state. But whoever invented these muffins had some creative ideas to mimic crude oil, one of Oklahoma's most important contributions to the rest of the country.

Oklahoma Crude Muffins

1 recipe Rich 'n' Sweet Muffins

½ cup strongly brewed coffee, cooled

2 ounces semisweet chocolate

2 tablespoons butter or margarine

Prepare muffin recipe as directed except increase sugar to ¾ cup and substitute coffee for milk.

Combine chocolate and butter or margarine in a double boiler and melt over simmering water. (This is a very old recipe. The melting could probably be done in a microwave oven just as well.) Cool completely.

Drizzle one teaspoonful melted chocolate over batter in each muffin cup; swirl into batter. Makes 1 dozen, 220 calories each.
