Old Fashioned Butternut Squash / Pumpkin Soup

Made with Either Butternut Squash or Pumpkin

This great soup can be served hot or cool, and can be made with either Butternut Squash or Pumpkin.

Peel and cut 3 cups of fresh Pumpkin or Squash. Cut into cubes. Prepare 5 cups of chicken broth by adding 6 Bullion cubes to 5 cups of simmering water. Stir until well dissolved.

Add pumpkin/squash to broth and simmer until it is tender and soft.

Peel 1 medium onion and sauté it in 1 tablespoon of butter until onion becomes soft.

Place onion and pumpkin/squash in a blender and puree. Return the mixture to the broth and salt and pepper to taste. Add the following ingredients to the broth mixture:

1 tablespoon of honey

2 tablespoons of syrup

¼ teaspoon of mace

¼ teaspoon of nutmeg

Cream is optional, and my preference as it makes the soup very rich. I use ½ cup of Half N Half.

This will yield approximately 6 cups of soup.

    Yuck! (Could not help myself.........I can't stand squash!) I would bet that if you love squash (as many do) this is a good soup! Good article.
