With fall fast approaching, why not curl up with a nice warm slice of Pumpkin Bread?
Pumpkin Bread
1/2 cup margarine, softened
1 2/3 cup white sugar
1 cup brown sugar
4 eggs
1 can (130z) pumpkin
1 1/4 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 1/2 teaspoons salt
1 teaspoon cloves
2/3 cup water
1 1/4 cup white flour
1/2 teaspoon baking powder
2 cups walnuts, halved
In a large bowl, cream margarine and sugars until fluffy. Stir in eggs, pumpkin, and water. Blend in pre-mixed (not sifted) flour, baking soda, salt, powder, cinnamon, and cloves. Stir in walnuts. Don't overbeat.
Pour into greased loaf pans and bake at 350 degrees, until toothpick comes our clean. Cool 15 minutes or so , remove from pan and Enjoy!
