Orange Flavored Flounder on the Barbecue Grill

I love the summer time when I can go outside and use the barbecue grill without freezing! Cooking on the grill gives me a chance to not only make dinner, but to go outside, enjoy the nice weather and the beautiful sky, and giggle at the bunnies hopping by. Sometimes I swear they are looking at me wishing for some of my barbecued dishes!

Last summer I made a delicious concoction that I plan on making again this summer - orange flavored flounder. It's delicious!

Ingredients:
1 pound of flounder
6 oranges
Half of stick of butter
2 teaspoons of Parmesan cheese
Parsley (dried of fresh)
Foil

Directions:
Melt butter in the microwave.
Combine Parmesan cheese and parsley into the melted butter.
Wash off flounder and brush butter mixture over both sides of the fish.
Lay out 1 piece of foil for each piece of fish, big enough to wrap up the fish into a foil packet.
Slices oranges thinly.
Place two or three orange slices on the first piece of foil. Place 1 piece of fish on top, then place two or three more oranges on top of the fish. With oranges on top and bottom, the juice permeates the fish better.
Wrap up the fish into a foil packet and repeat for each piece of fish.
Place all foil packets on the grill for 8-10 minutes on a medium setting.

Serve with baked potatoes cooked in the microwave with damp paper towels around them and holes poked in them to release steam. This is a great time saver. Then boil water, add and cook corn-on-the cob.

Substitutions:
If you don't like the ingredients above, there are other options. Instead of fish, use chicken. And instead of oranges, opt for lemons, limes, or grapefruits.
