Organic Chili Macaroni and Bison Recipe

An Economical, Fast and Delicious Recipe that Feeds a Hungry Crowd or Provides Leftovers

MH Bonham
Every year, we have a fair amount of ground venison in the fall and winter and ground bison in the spring and summer. I've come up with a number of tasty recipes for ground game meat including this very fast chili-mac recipe. All the ingredients I use are organic, so this is a tasty and nutritious recipe. You can actually do this as a one-pot meal and it takes about 15 minutes to prepare.

1 pound organic macaroni
1 pound ground bison, venison or elk meat
1/4 cup diced organic onion
1 Tbsp organic olive oil
4 cloves organic garlic
10 ounce package frozen organic tri-colored peppers
1 tsp garlic powder
1 Tbsp chili powder
1 tsp sea salt
1/2 tsp black pepper
1 tsp oregano
1 can of organic chunky tomato sauce (28 ounce) or organic spaghetti sauce
1 cup shredded organic Monterey Jack Cheese

1. Cook organic macaroni according to directions. Drain and set aside.
2. Crush garlic and add it and onion in pan, and saute in olive oil.
3. Add bison and peppers. Cook until bison is no longer pink.
4, Add garlic powder, chili powered, salt, pepper, oregano and tomato sauce, heat until bubbly.
5. Add cooked macaroni and stir thoroughly. Heat until hot.
6. Add cheese and stir.
7. Serve and enjoy.
