Organic Gluten-Free Recipes

There are many organic gluten-free recipes out there, but not all of them are good. Many require special ingredients or hard to find ingredients. Others just don't have a good mix of ingredients.

Here are a few of my favorite organic gluten-free recipes that are sure to please even those without a gluten allergy!

Organic Gluten Free Broccoli Cheddar Soup

This soup is a great soup to make on a cold rainy or snowy day. It is warm, hearty and delicious.

Ingredients:
2 tablespoons olive oil
1 medium onion, diced
1 large potato, peeled and cut into small cubes (1 1/2 cups)
2 cloves garlic, grated
3 1/2 cups light, vegetable broth
1 large head of broccoli with deep green color, cut into small florets

2/3 cup freshly grated aged Cheddar, plus extra
1-2 green onions
salt, pepper, smoked paprika, more olive oil, sour cream (to taste)

Note: use as many organic products as you can find.

Add olive oil to a large saucepan over medium-high heat. Add onion and a big pinch of salt and pepper and sauté for 2 minutes. Stir in the potatoes, cover, and cook for about 4 minutes, until just soft. Uncover, stir in the garlic, and then add the broth. Bring to a boil, stir in the broccoli once potatoes are tender. Simmer until the broccoli is tender throughout, 2 - 4 minutes.

Remove the soup from heat and puree with an immersion blender or in a regular blender if necessary. Add half the cheddar cheese and sour cream to taste. Add more water or broth if you want to thin out the soup at all. Taste and add more salt if needed.

Serve adding the remaining cheese, a drizzle of olive oil, and a tiny pinch of smoked paprika.

Organic Gluten Free Coconut Sweet Potato Recipe

This has a fabulous sweet and creamy taste. It's not too sweet and is just the perfect blend of ingredients. It is one recipe that I always make for the holidays.

Ingredients:
2 pounds organic sweet potatoes
1/4 cup coconut milk
3/4 tablespoon fresh ginger, grated
3/4 tablespoon maple syrup
1/3 teaspoon salt
1/4 cup raw, unsweetened grated coconut
1 1/2 tablespoons olive oil

Preheat your oven to 350F degrees. Oil a medium-sized casserole dish.

Poke each of your sweet potatoes with a fork and cover with foil. Place in oven and bake until they are as soft as butter. This may take between an hour to an hour and a half depending on the size of your sweet potatoes.

Remove the potatoes from the oven, and let them cool a little. Cut each sweet potato in half. Scrape the flesh into a mixing bowl. You should have about two and a half to three cups of sweet potatoes. Mash the sweet potatoes with the coconut milk. Stir in the ginger, maple syrup and salt. Taste and adjust the seasoning if needed.

Spoon the sweet potato mixture into baking dish and sprinkle with coconut, drizzle with olive oil and bake uncovered until warm and the coconut is golden. This will probably take about 30 minutes.

Organic Gluten Free Brownie Recipe

This recipe is out of this world! You would hardly know it wasn't a regular brownie recipe. I encourage everyone to try this brownie recipe because it is moist and delicious. This tastes extra good with a bowl of organic vanilla ice cream!

Ingredients:

2/3 cup Organic applesauce
2 cups organic brown sugar
2 eggs
4 tsps pure vanilla extract
2 cup organic brown rice flour
1 1/3 cup organic cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 1/3 cup hot organic coffee

Preheat oven to 350 F. Spray medium/large baking dish with olive oil. Mix applesauce, brown sugar, eggs and vanilla in a bowl by hand. Mix the rest of the ingredients in a separate bowl except the coffee. Combine both sets of ingredients and mix until thick.

Add the coffee and mix well by. The mixture will be thick and very sticky.

Pour into the greased dish and spread out evenly.

Bake for 30-45 minutes or until the middle is slightly soft and a toothpick comes out mostly clean, then turn the oven off and let brownies cool. Remove and cut.
