Pakoras (Fried Vegetables Pakistani Style)

This is an Indian/Pakistani recipe. Pakoras are spice floured vegetables that are deep fried. Ok, not necessarily healthy. But, these are wonderful and even those who do not like spices will enjoy them. They are great snack/finger food.
We took this snack to family members who say: "I like American food only," and they enjoyed these snacks.

Basic flour mixture - ***Ingredients:
1-1/2 cup Gram flour
8 Green chilies (finely chopped)
1 bunch Coriander leaves (finely chopped)
1 large onion (finely chopped)
2tbsp Red chili
2tsp cumin
2tsp turmeric
1tbsp garam masala
1/3tbsp baking soda
2 Eggs
2tbsp Salt
1tsp oil
water

Directions
mix all dry ingredients, add the chopped onions, chilies, Add the beaten egg, oil and enough water for the mixture to be in between the texture of cake and brownie batter. For the vegetable, you can use cauliflower or potatoes. slice the potatoes into thin circles or cut the cauliflower into 1 to 2 inch pieces. If you use spinach, you will need to chop the spinach finely and mix it in with the batter. then, mix 1tbsp of oil and a bit of water until the dough forms small balls that will hold their shape. If you are using vegetables such as cauliflower and potatoes, you will need to dip each piece into the flour mixture. You might need to add more water to the mixture so that the batter is not too thick for dipping vegetables into. Add it slowly. Put at least an inch of oil in the bottom of a pan. Heat the oil on high. If the oil is not hot enough, the pakoras will not cook correctly. Drop the pakoras into the pot of hot oil. Make sure that you don't overlap the pakoras. Try turning them once with a slotted spoon. when they float to the top (in a deep fryer) or develop that golden hard crust, take out and drain on paper towels. The gram flour and baking soda give the Pakoras a different texture. The spices give them more flavor. some people dip these fried vegetables into a sauce or chutney. I could give you a good recipe of a sauce or chutney, but you might want to experiment on your own. Personally, I can eat them plain.
