She longed just to enjoy a cookie that had a great taste to them and thought about what it would be like just to bite into a delicious, natural cookie that tasted good and was good for you. So, in 1988 Pamela left the family business and started her own independent company with a determination to make baked goods that were gluten-free, wheat free, and taste great.

The first time that I tried Pamela's Products Spicy Ginger Cookies was with some tea and after I tasted one cookie; my first thought was "Wow, this cookie is very spicy!" I meant that in a good way. I could taste the big chunks of crystallized ginger in the cookie too. I usually put ginger in my tea, but when I ate Pamela's Products Spicy Ginger Cookies, I felt that I did not have to put any ginger in my tea, because the cookie had enough in it and my taste for ginger was satisfied after eating just one cookie.
Pamela's Products makes high quality, healthy baked goods that taste wonderful and because she uses such natural ingredients and puts so much effort into making her products taste so good, it really shows that she cares a lot about her customers.
