Paradise Cantina Scheduled to Open December, 2010

I am excitedly awaiting the opening of the Paradise Cantina, that will be located at 1212 North State Parkway, in Chicago's Gold Coast neighborhood. When I was in Las Vegas, for one week, I went to their Paradise Cantina twice, because I enjoyed it so much. Not only was the atmosphere very beachy and lively, the food was outstanding. Being a guacamole fanatic, I had to try theirs. It was so creamy, and it had just the right hint of cilantro and lime in it. It wasn't too spicy or overloaded with onions. I usually am not a huge fan of buffalo wings, but I wanted to try them because everyone else at other tables were ordering them by the platters. I have to say, that they were delicious, and the celery was crunch and not soft and wilted. I am used to blue cheese dressing with my wings, but these were served with Ranch.

I drove past the place on North State Parkway a couple times in the last couple weeks to see how they were coming along, because I keep thinking, and hoping that they might open early. Although I'm up that way quite frequently, as I have business contacts up near the Gold Coast, it's still kind of a long drive from where I live. If the Chicago location is anything like the Las Vegas restaurant, it will be packed every night and the weekends will be crazy. If I heard right, the new Paradise Cantina will also have an outdoor patio for when it gets warm. I cannot wait for this place to open.
