2 tsp. Lemon Juice
2 tsp. Dry Sherry
2 tbs. Dry Bread Crumbs, Seasoned
1 tbs. Grated Parmesan Cheese
1/2 tsp. Lemon Zest
1/8 tsp. Garlic Powder
3 oz Grouper Fillet
Vegetable Cooking Spray
1 Medium Spaghetti Squash
2 oz Angel Hair Pasta
1/2 tsp olive oil
2 Large Cloves of Garlic, minced
8 oz Low Sodium Canned Tomatoes
2 Whole Greek Olives, finely chopped
1 tsp Capers
1 pinch Red pepper flakes
2 tsp. parsley, finely chopped
1 tsp Parmesan Cheese
1 Lemon Twist (garnish)
1 spring of Parsley (garnish)
Procedure:
Parmesan Crusted Grouper:
1.Combine lemon juice and sherry in a small bowl. Combine bread crumbs, Parmesan Cheese, lemon zest, and garlic powder in a separate bowl.
2. Rinse Grouper fillet with cool water and pat dry.
3. Dip fillet in lemon juice mixture; roll in bread crumbs mixture, then place the fillet in a 10 x 6 x 2 - inch baking dish coated with cooking spray. sprinkle with remaining breadcrumb mixture.
4. Bake uncovered at 400 degrees for 20-25 minutes or until fish flakes easily when tested with a fork.
Spaghetti Squash with Angel Hair:
1. Slice squash in half lengthwise. Scoop out the seeds with a spoon as you would with a pumpkin.
2. Then completely submerge both halves into boiling water and cook for about 25 minutes, or until the inside is tender to a fork and pulls apart in strands. (it is better to under cook if you are not sure.)
3. Remove, drain, and cool with cold water or an ice bath to stop the cooking. Then use a fork to scrape the cooked squash out of its skin, and at the same time fluff and separate the squash into spaghetti-like strands. Discard the skin.
4. Add the angel hair pasta into a pot of boiling water. Salt the water to season the pasta. cook for about 5 to 6 minutes or until al dente.
5. remove, drain and cool with cold water or an ice bath to stop the cooking.
6. Toss the angle hair pasta and spaghetti squash together.
Delicoso Sauce:
1. Heat olive oil in a medium, heavy, non corrosive skillet. Add garlic and cook for 2 min. Add tomatoes and liquid ingredients and cook for 30 minutes, or until sauce thickens slightly.
2. Just before pasta is ready add the remaining ingredients.
To Serve
Place the Spaghetti squash with angle hair in the middle of the plate. pour all of the sauce except for a couple of spoonfuls over the pasta. place the grouper on top of the pasta. spoon remaining sauce over the grouper. Garnish with lemon twist and parsley.
